8th August – National Zucchini Day. Yes that’s right, there is a whole day devoted to this versatile green vegetable – at least if you live in the US – but hey, I love this little guy so much I’m happy to jump on the band wagon even down here in Aus.

Now if you are like us and eat mostly paleo, low-carb or grain-free than this boy is one of your best friends.

So I thought it was time to celebrate with some Zucchini Fun Facts and some of my favourite recipes from the blogosphere.

  1. Zucchinis are not technically a vegetable – they are a fruit.
  2. Zucchinis are aslo known as squash or courgettes
  3. A single Zucchini is actually called a Zucchina – who knew?
  4. The worlds largest Zucchini – grwon in the UK – was 69.5 inches!
  5. You can eat the flowers of zucchini plants – not just the fruit.

I go absolutely gaga over marinated veggies.  I am always over planting in the garden so there is plenty to preserve and ferment – this way I have their yummy goodness all year round!

Almond Flour Zucchini Bread

If you are going grain-free you really can’t go past Danielle Walker’s Against All Grain.  One of my most used cookbooks.  Grain-free bread that isnt stody and heavy is often hard to find.  Danielle’s breads with her suoper fine almond flour are aboutr as close to white flour that you can get going grain-free.  Check out this yummy Zucchini Bread.
