8th August – National Zucchini Day. Yes that’s right, there is a whole day devoted to this versatile green vegetable – at least if you live in the US – but hey, I love this little guy so much I’m happy to jump on the band wagon even down here in Aus.
Now if you are like us and eat mostly paleo, low-carb or grain-free than this boy is one of your best friends.
So I thought it was time to celebrate with some Zucchini Fun Facts and some of my favourite recipes from the blogosphere.

- Zucchinis are not technically a vegetable – they are a fruit.
- Zucchinis are aslo known as squash or courgettes
- A single Zucchini is actually called a Zucchina – who knew?
- The worlds largest Zucchini – grwon in the UK – was 69.5 inches!
- You can eat the flowers of zucchini plants – not just the fruit.
