OMG – Aren’t bliss balls just the bomb!

Okay I might be channeling my 11 year old niece, but kids have the best way of describing stuff sometimes!

Snacks have always been my downfall.  I tend to be a grazer so rather than a big solid meals three times a day I pick and nibble.  Not the best habit perhaps, but I know my sins.

This means I have to be super prepared with some healthy snacks in the house or at work all the time.

While I am generally a savoury person, occasionally that sweet tooth creeps in, so I was pretty chuffed to discover bliss balls – and there is almost no end to the combinations of flavours you can put together.

Today’s offering? Lemon, Almond, Coconut.

So my advice – whip some of these babies up, grab a coffee and a good book and take some “me time”.

Ingredients

  • 2 cups shredded coconut + extra
  • ½ cup almonds
  • 2-3 tbsp rice malt syrup (to taste)
  • 2 tbsp coconut oil
  • Zest and juice of 1 lemon

Instructions

  • Place all ingredients into the food processor and blend for 1 minute.
  • Roll into small balls around the size of a 10c piece. (tip: dampen hands before rolling to avoid ending up with lemon almond coconut coated fingers!)
  • Roll in extra coconut.
  • Chill in the fridge until firm.
