We are always on the look out for new grain-free bread to try. Right now we have a sudden glut of bananas due to some trees down during a recent storm.

So banana bread it is then – and it goes so well with coconut!

Ingredients

  • ½ cup coconut oil, melted
  • ½ cup malt syrup
  • ¾ teaspoon sea salt
  • 6 eggs
  • 2 teaspoons pure vanilla extract
  • ¾ cup coconut flour
  • 2 bananas, mashed
  • 2 tablespoons desiccated coconut

Instructions

  • Preheat the oven to 350 degrees F or 175 degrees C.
  • Prepare a standard loaf pan with coconut oil.
  • In a large bowl, whisk the salt, eggs, vanilla.
  • Whisk in the coconut oil and honey.
  • Next, fold in the coconut flour until completely combined with no lumps.
  • Lastly, stir in the mashed bananas.
  • Pour the batter into the prepared loaf pan and top with the shredded coconut.
  • Bake for 45-50 minutes or until a toothpick comes out clean.
  • Let cool completely before removing from the loaf pan and serving.
  • Keep refrigerated.
