Since national Zucchini Day earlier in August I’ve been looking into more recipes to use for these little wonder vegetables. Also it’s coming into spring down in the Land of Aus so its time to think about planting them out – if I can find room in the already crowded veggie patch!

Zucchini Bacon Bites

I came across a recipe that basically replaced Tater Tots (not that we have those in Australia) with Zucchini Tots in an effort to make them a little healthier.  Of course I’ve done the usual and paleofied it somewhat ie – removed the dreaded breadcrumbs)  For those paleo purists it does have dairy – not sure how they would turn out with out the cheese. But as we are 80/20 (and my 20 is pretty much cheese and wine) it all worked out perfectly in our household.

In 3 days 3 whole trays have been devoured and I’m under strict instructions to make sure these are in the weekly Sunday Meal Prep sessions. So they were definitely a  hit.

Working from home I tend to want to snack a bit rather than make the effort of constructing a whole meal.  These are perfect.  The cheese is actually minimal – there’s no grains, no added sugar and adding bacon to the recipe increases the protein hit.

And they are great hot or cold.

Hubby takes about 8 to lunch with a kale slaw salad – but so far has had to share them with his mates.  So hope you enjoy these and thanks to Tasty on Buzzfeed for the intial inspiration.

Zucchini & Bacon Bites

In summer we always have soo many Zucchinis so we are always looking for things to do with them. These Zucchini bacon bites are great to have in the fridge as a healthy snack instead of grabbing a cookie. And a great way to get veggies into the kids

Ingredients
  • 4 medium-sized zucchini or 3 large
  • Salt
  • ¾ cup almond meal (make sure to use meal not flour for the consistency)
  • ¾ cup tasty cheese, shredded
  • 2 eggs
  • 2 rashers of bacon chopped
  • 1 tablespoon garlic powder
  • 1 teaspoon pepper
Instructions
  1. Preheat oven to 400°F/200˚C.
  2. Grate the zucchini into a bowl and salt generously
  3. Allow zucchini to sit for 20 minutes. The salt will draw out the moisture.
  4. While the zucchini is sitting fry the chopped bacon until cooked but not crisp and set aside
  5. Using a clean dish towl bundle up the greated zucchini and squeeze the moiture out. Ensure to squeeze well as too much moisture will prevetn the bites holding their shape
  6. Put the zucchini back into the bowl and add the almond meal, grated cheese, eggs, bacon, garlic powder, and pepper. Mix together until well-blended.
  7. Take a tablespoon of mixture and roll it into a cylindrical shape; repeat for rest of mixture (should make about 16).
  8. Place on a greased baking sheet and place in the oven for 20 to 25 minutes or until the bites are golden.
  9. Serve warm or cold and enjoy!
Notes
These are great at parties as finger food with a dipping sauce
These also freeze well so you can make well in advance when you have a glut of zucchinis in the garden
